Bread Adventure

I like to cook,
and love to bake.
Bread like this is usually not my idea of baking.
Mostly because of the time I thought it would take.
It has been years since I baked real bread.
The kind you put butter on smelling that amazing aroma all over the house.

A friend, Becky told me about this bread recipe.
She makes it all the time.

by Jeff Hertzberg & Zoe Francois

I call it "miracle bread".
Back in the day I remember kneading the bread over and over, resting, etc.
Plus lots of ingredients.
A person could get very frustrated with a lot of directions and taking nearly all day to do.

If you have never made bread before, or too busy to think you can't make bread...
I highly recommend this recipe to you.

1 1/2 Tablespoons yeast
1 1/2 Tablespoons kosher Salt (regular salt is too salty)
3 Cups luke warm water
6 1/2 Cups all purpose flour ( I used AP and whole wheat)
Cornmeal (small amount to bake bread on)

Becky uses:
1/2 Cup whole wheat, 1/2 Cup Rye Flour, and 5 1/2 Cups All Purpose
for the European Peasant Bread

Simple ingredients, for excellent healthy bread.
Check the website and watch the simple video.
Make some bread!

Let the bread rest and you rest too...

Now you have me wanting to make bread and cinnamon buns. I used to all the time and loved it mostly in the winter. I love the smell of it in the house and watching the dough rise so high. Lovely Blog.xo

I have a question, do you have rye in USA!? We eat a lot rye bread here it is more healthier than any white breads. It is common thinking that you use only white flours not dark at all, false or true!? If this is true I 'm wondering why nobody grows rye there, is there some real good reason for that like climate or something.
I'm so curious:)

i love bread and have never baked any before, this looks wonderful to me. i got excited when i saw in five minutes then i watched the video and it takes 4 hours including rising times and cooking time. not for me, i will continue to get mine at the bakery. but i would love this if i were not a person who hates all cooking.

Thanks, Jane. The pictures are wonderful.

Sandra, I am not into spending hours making and kneading bread either. Through a lot of trying different recipes, this is the simplest and best for me.

I have learned that in baking this bread, you do what you normally do. It is sort of like doing the laundry, but the laundry prep of gathering, sorting, and spot finding probably takes more time than putting the bread ingredients together. The rising bread sitting on the counter is the washing machine doing all the cleaning part. Forming the loaf is less time than putting the clothes into the dryer. The oven bakes the bread. Voila! Fresh bread. And you don't have to fold and put away the bread, just slice and eat.

Anyway, I do it because the cost of artisan bread is ridiculous. And once I have a batch of dough rising, I am good for four loaves down the road.
